Thank you for the response Chuck! I am so happy that it resonated for you and struck a chord. The good news is that there are still healthy options for wheat. You just have to play detective and make sure you are getting the original grain and not the one that has been exposed to chemicals and radiation! Einkorn is one of the original wheat strains. Another option is in the freezer section, its called Ezekiel bread. It definitely has a different consistency than the fluffy white bread you get in the bread aisle, but I’ve grown to love it! As long as there is no gluten sensitivity, you should be fine with it. :)
