The fact of the matter is that most of the wheat you get in traditional foods has been altered from it’s original state. Scientists have created a higher yielding product that starts with a being exposed to radiation as well as a poisonous chemical — chemical mutagenisis. This is considered a hybridization practice. However, it is not the wheat our ancestors used.
That being said, I have had many testimonials where eliminating gluten (and it being the only thing eliminated from the diet) has resulted in a huge shift in disease exacerbated by inflammation. My mother’s own experience is one of those testimonials.
